Cranberry and Almond Granola

Ingredients:

1 cup boiling water

1/2 cup brown sugar

1 cup sweetened dried cranberries

1 (6 oz) bag dried mixed tropical fruit

3 cups regular oats

1/3 cup sliced almonds

1/3 cup roasted sunflower kernels

1/2 cup flaked sweetened coconut

2 tbsp non-fat dry milk

1 tsp ground cinnamon

 

Instructions:

Preheat oven to 300 degrees F.

In a bowl, combine the water, sugar, cranberries and the tropical fruit. Mix well and let stand for about 15 minutes. In a separate bowl, combine the oats and other ingredients and then mix together with the dried fruit mixture. Spread the mixture evenly on a baking pan and bake for an hour, stirring it every 15 minutes while it bakes. Once it is cooked, remove from the oven and allow the granola to cool completely. Then store it as cereal in an airtight container for up to a week in the refrigerator.

This is a preservative free cereal the whole family will love. You can experiment with the dried fruit, nuts and seeds, and the seasoning, to come up with different variations. For example, swap walnuts for the almonds to make the recipe even more heart healthy. Just make sure you keep to the proportions listed.
