Hash Brown Breakfast Casserole

Ingredients:
1 (32 oz) package of frozen hash brown potatoes
8 oz low salt cooked ham, diced
2 (10.75 oz) cans condensed cream of potato soup
1 (16 oz) container low fat sour cream
1 1/4 cups low fat Parmesan cheese, grated
2 cups low fat Cheddar cheese, grated

Instructions:
Preheat oven to 375 degrees F. Grease a 9 x 13 inch casserole dish.

Combine the cream of potato soup, sour cream, Cheddar cheese, ham and hash browns in a large bowl. Mix well. Place into the greased casserole dish, top with Parmesan cheese and bake in the oven for about one hour. The casserole should be nice and brown and bubbly on top. Serve immediately with toast on the side, or a salad if you wish to serve this for brunch.
