Mother’s Day Griddlecakes

These pancakes are a simple but tasty morning starter. Using ingredients you already have in your kitchen makes it a much smarter budget breakfast than buying prepackaged pancake mix. Top these pancakes with honey, jelly or even fresh mixed fruit for a change from maple syrup, or try the Joseph’s syrup for diabetics for a great maple taste without calories.

What You Need:

1 C of flour
1 tsp baking soda
1 tsp of cream of tartar
2 Tbsp butter, diced
1 egg, lightly beaten
2/3 C of milk

How to Make It:

Lightly spray a skillet or griddle with a non stick cooking spray.
Place the pan over medium heat and allow it to preheat.
Toss the flour, baking soda and cream of tartar together in a mixing bowl.
Add the butter and use your fingers to rub it into the flour until it looks like breadcrumbs.
Stir in the egg.
Gradually stir in the milk checking the consistency as you add.
Add just enough milk to reach a thick consistency.
Drop the batter by spoonfuls on the preheated griddle or skillet.
Cook 3 minutes or until the edges begin to bubble.
Flip and continue cooking 2 minutes or until nicely browned.

Makes 3 servings. Simply double the recipe for more servings and keep warm on a platter in the oven topped with tin foil. You an also heat berries to make a hot syrup to serve on the side for a more hearty yet elegant brunch.
