Ricotta Cheese Buttermilk Pancakes

This is a great recipe for light and fluffy pancakes the whole family will enjoy.

These are low fat and light and fluffy too, though they pack a lot of protein to help you feel full. These are a great way to start a cold morning or to enjoy as part of a hearty brunch.

Ingredients:
1 cup all purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon nutmeg
2 eggs, separated
1 cup buttermilk
2/3 cup whole milk ricotta cheese
1 tablespoon grated lemon peel

Instructions:
Preheat the oven to 200 degrees.

Place the flour, baking powder, baking soda and nutmeg into a large mixing bowl. Whisk together to make sure that all the ingredients are blended together well.

Place the egg yolks in a separate bowl.  Beat well.  Add in buttermilk, whisking as you go.

Add the ricotta cheese and lemon peel and whisk  well until they are all completely blended.

Place the egg whites in a separate bowl. Beat them with an electric mixer on medium high speed until soft peaks begin to form as they would with a meringue.

Add the ricotta cheese mixture to the flour mixture,  and blend lightly until just combined.

Fold in the egg whites carefully, making sure all the ingredients are blended, but in as few strokes as possible.

Heat a skillet over medium heat until hot. Coat the skillet with  the oil and heat the oil until it just starts to bubble.

Using a measuring cup, pour a 1/4 cup of batter onto the prepared skillet. Repeat until the skillet is full but the pancakes are not touching in the frying pan.

Cook 2 minutes or until bubbles appear around the edge. Flip each pancake, and continue cooking 1 minute or until they appear a light brown. Place cooked flapjacks on an oven safe platter in the heated oven to keep them warm until ready to serve.

Make your second and third batches in the same way. Continue using 1/4 cup of batter and fitting 3 to four pancakes in the frying pan until you have used all of the pancake batter. When they are done, serve with your choice of butter, maple syrup, and/or preserves. You might also want to serve some turkey bacon or sausage on the side, or the vegetarian equivalents.

Makes about 16 pancakes.
