Shrimp with Pasta and Broccoli

1 package whole-wheat fettuccine
2 cups frozen broccoli florets
2 tsp olive oil
2 cloves of garlic, peeled and chopped finely
1 medium onion, finely chopped
1 medium carrot, finely chopped
1 tsp Italian seasoning
Dash of red pepper flakes
1 pound of frozen medium-sized shrimp, thawed, without shells

Boil the pasta according to the package directions. It should say about 8 to 10 minutes.
Add the frozen broccoli during the last 5 minutes of cooking.
While the pasta is boiling:
In a frying pan, heat the oil over a medium flame.
Add the garlic. Cook 1 minute.
Add the onion. Cook 2 minutes.
Add the carrot. Cook 3 minute, stirring occasionally.
Add the shrimp. Cook until they turn pink, stirring occasionally. about 4 to 5 minutes.
Drain the pasta and broccoli. Place in a large serving bowl.
Pour the shrimp sauce over the pasta and broccoli.
Toss gently to mix through without breaking the shrimp.
Serve with a side salad and some crusty Italian bread or garlic bread for a quick, easy and complete meal.

If shrimp is not in your budget, this recipe will also work well with any leftover cooked chicken or turkey.
