I love dessert. It’s my (and many others) favorite part of any meal. Desserts can be versatile so for those times when you have to run after dinner, be sure to carry your dessert with you so you don’t miss out. After all, you didn’t clean your plate for nothing, right? T

hat being said, dessert doesn’t necessarily have to be eaten only after dinner. In the summertime, it’s nice to have something refreshing and sweet after lunch or as a mid-afternoon snack. We’ll look at both options here.

When I was growing up, there was a woman who sold snow cones for fifty cents. You could get all flavors. We would rush over in the summer and get one and savor it as long as we could. Use that same idea to create your own at home snow cones for you and the kids the kids.

Using eight ounce plastic or paper cups (or ice cube trays if you prefer), fill the cup half full with a fruit smoothie, Kool-Aid, or 100 percent fruit juice.

You can do this one of two ways. Stick a Popsicle stick in the center of the cup once the contents start to freeze. When the liquid is frozen solid, cut the cup away for a frozen pop. Alternatively, you can cut off the top of the cup and eat your treat like shaved ice. Both are refreshing desserts on a warm evening or hot afternoon.
